If you would like to set a Default Value on Data Entries you will need to open the Advanced Configuration tab of the Name Value Pair Form of your NV of interest.

From the Advanced Configuration Tab you will see the Default Value attribute.  FIll out the value according to what you would like the operator to see as the initial value.  Keep in mind that this value can be overwritten by the operator.
